BROWNIES:

1 1/2 c Semisweet chocolate chips
1/2 c Margarine
3/4 c Brown sugar
2 lg Eggs
1 t Instant coffee — crystals
2 tb Water
1/2 ts Baking powder
3/4 c All-purpose flour

 

RASPBERRY TRUFFLE FILLING: 1 c Semisweet chocolate chips

1/4 ts Instant coffee — crystals
1 pk Cream cheese — 8 oz
1/4 c Powdered sugar
1/3 c Seedless red raspberry

Preserves GLAZE: 1/4 c Semisweet chocolate chips

1 t Shortening

Brownies: In saucepan over low heat, melt morsels and margarine; cool slightly. In large mixing bowl, beat sugar and eggs. Add chocolate mixture and coffee dissolved in water. Mix well. Stir in baking powder and flour; blend well. Spread in greased 9×9 pan. Bake at 350^ for 30-35 minutes or until toothpick tests clean. Raspberry Truffle Filling: Melt chocolate with coffee in pan over low heat. Set aside. In small mixing bowl, beat softened cream cheese until fluffy; add powdered sugar and preserves. Beat until fluffy. Beat in melted chocolate mixture until well blended. Spread over cooled browned layer. Glaze: In small saucepan over low heat, melt chocolate and shortening. 3.5 inch diameter, not homemade, how many calories are in a chocolate chip muffin and a double chocolate muffin?

Depends on how it is made. If it is prepackaged, look at the wrapper.

I want to buy 2.2 Pounds of Chocolate Truffles - French Truffles. I find them online but the shipping is expensive. Does anyone know if any stores carry these now? I am in bay area California.

There is actually a pretty inexpensive one that's sold at Trader Joe's. It looks kind of like this one:

Otherwise there are many fine chocolate shops in the San Francisco area. Consider See's, as they're not that expensive at $17 a pound for truffles (not the rolled French style).

Last year i gave my niece the exact same party and i had things like, chocolate covered marshmallows, rice crispy treats, licorice, oreo's, pretzels etc. But, when i drizzled the chocolate it didn't taste sweet enough. I am looking for the gourmet milk chocolate taste but don't have all that money to spend. I was told that there was a way to make the chocolate sweeter but don't know the way. Please, need help soon. I will appreciate your suggestions!!!!!!!!

I was shopping in Acme this week and noticed the milk chocolate chips were the same price as the semi-sweet (and on sale). Hope that helps. Little girls should enjoy store brand milk chocolate chips melted. You can also purchase butterscotch and peanut butter chips both sweet.

I have no chocolate chips, can i substitute powder for them, IN a truffle recipe

I asked this question of my mother when I thought I could replace chips for the cocoa powder…She said that that wouldn't work. They are two very different types of chocolate, and can't be substituted for each other.

Yummy Chocolate Truffles

yield about 6 dozen

3 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1 tablespoon vanilla extract

In large saucepan, melt chocolate chips with sweetened condensed milk. Remove from heat and stir in vanilla. Transfer the mixture into a medium bowl. Cover and chill 2 to 3 hours or until firm. Shape mixture into 1 inch balls; roll in desired covering and/or decorate them. Refrigerate in a tightly covered dish.

Top with your choice of toppings: colored sugar, chocolate sprinkles, or colored sprinkles.

Ingredients:

For the Basic Truffles:
4 oz Ghirardelli Bittersweet Chocolate
2 tb Butter, cut up
2 tb Heavy whipping cream
1 1/2 tb Liqueur (to 2 Tbsp)

Chocolate Coating for Truffles:
4 oz Ghirardelli Bittersweet Chocolate
2 ts Peanut, almond, or walnut oil

Instructions:

For Truffles: In double boiler, melt broken chocolate, stirring constantly. (Or microwave 2 1/2 to 3 minutes on medium.) Remove chocolate from heat; blend in butter. Stir in cream, then liqueur. Combine with chopped nuts or candied fruit if desired. Chill 10-15 minutes, stirring frequently until thick enough to hold a shape. Drop by heaping teaspoon or #70 scoop onto foil lined baking pan. Shape round, if desires. Cover and freeze 20-30 minutes to set truffles firm for dipping with chocolate. For a variety of truffles, repeat the recipes using liqueurs such as Grand Marnier, Amaretto, Kahlua, Creme de Menthe.

 

For Coating: Melt chocolate as in the instructions for the Truffles. Remove from heat and stir in oil. Cool chocolate to 85-90-F for dipping. Dip cold, firm truffle into melted chocolate, holding with a fork and spooning with several coats of chocolate. Place each onto foil lined baking pan. Decorate top with nuts, candied fruit, etc. Chill at least 2 hours to set chocolate. Roll in Ghirardelli Ground Chocolate, if desired. Place into tight container and store in cool, dry place to age for several days. Coats 12 truffles.
