12 oz semi-sweet chocolate morsels
1/4 cup heavy cream
1 tablespoon butter
2 each egg yolks
1/4 cup baileys irish cream
Instructions:
Mix chocolate morsels, the Baileys and the heavy cream together. Melt them over very low heat. Whisk in the yolks, (be careful) only one at a time. The mixture should thicken. Whisk in the butter too. Refrigerate overnight, or until firm. With a spoon make small balls from it. For coating you can choose: powdered sugar, cocoa or chopped nuts. Roll the balls in the coating of your choice.
Serving tip: As an alcoholic truffle I wouldn’t give many to children. I love this truffle in cold winter days.
